Pinto Beans
1 packet of dry pinto beans
1 whole sweet onion, chopped
1 green bell pepper, chopped
3 Tbsp. garlic, chopped (about 6 cloves)
a bunch of fresh cilantro chopped
2 Tbsp. Cumin powder
2 tsp. Chili powder (salt free)
8 cups of water
2 packets of herbox zero sodium chicken seasoning
Throw it all in the crock pot, cook on high for 8 hours.
Beans are perfect and flavorful, no need to soak beans. Also, this makes a huge batch. Can serve with rice and salsa.
Another option to use for the beans:
Drain most of the liquid from the beans, puree in the food processor to the consistancy of refride beans. Spread mixture on low sodium corn tortillas. Bake in a 350 degree oven for approximately 10 minutes. Serve with chopped lettuce and fresh salsa.
