Mashed Potatoes- Veggie Patties

1 tablespoon olive oil

1 small onion, diced

1 clove garlic, minced

1 cup cooked vegetables (such as broccoli, carrots, or zucchini)

2 cups mashed potatoes

1 cup cooked brown rice – optional

1 teaspoon onion powder

1 teaspoon pepper

1 teaspoon dried parsley

Sauté onion and garlic in olive oil until tender. Chop cooked vegetables into small pieces. Stir together all ingredients.

Form into patties and place on an oiled baking sheet. Bake at 350° for 15 to 20 minutes or until lightly browned on bottom. Turn over and bake for an additional 5 to 10 minutes or until other side is browned. (Baking time will vary depending on the size of the patties.)
