Saute 5 minutes: 1 onion, chopped and 4 T butter.
Blend in: 4 T flour, 2 tsp salt
Add: 1/2 tsp dry mustard, 1/2 tsp paprika and 1/4 tsp freshly ground pepper
Add: 2 cups milk
Cook until thickened.
Add: 2 cups or more grated Cheddar cheese and 2 diced pimientos (optional)
Peel and slice 8 medium potatoes and layer in a 9 x 12-inch baking pan. Spoon cheese sauce over top.
Bake in 350F oven for 45 minutes covered with aluminum foil. Uncover and bake 15 minutes more until golden brown.
