Putanesca Pasta

Spray olive oil
1 red onion, chopped
6 garlic cloves, chopped
2 tablespoons dried oregano
1 tablespoon or more dried crushed red pepper
2, 16 ounce cans chopped tomatoes with juices
1 cup or more black olives, chopped
1 cup or more green olives, chopped
2 tablespoons capers, chopped
1/2 cup or more red wine
12 ounces linguine or other pasta, cooked (If the sauce is especially juicy, I cook the pasta in the sauce itself)

1 cup grated parmesan
Additional grated parmesan

Heat oil in large saute pan over medium-high heat. Add chopped onions, garlic, oregano & crushed red pepper & saute about 5 minutes. Add red wine as needed during the saute process to prevent the mixture from burning.

Add tomatoes with their juices & black & green olives & more red wine; simmer until sauce begins to thicken, about 8 minutes. Add pasta & 1 cup parmesan cheese; toss until sauce coats pasta. Season to taste with salt & pepper.

Transfer to large shallow bowl, & pass additional parmesan.

Serves about 8
