Savory Cauliflower Pie

3 cups dried ww bread crumbs
Cant believe its not butter spray
1 head cauliflower, small florets
1 cup chopped onions
1/2 cup thinly sliced carrots
2 cloves garlic - minced
salt & pepper to taste
1/2 cup shredded cheddar
3 inches chevre
1 tablespoon oregeno
2 eggs or 1/2 cup egg beaters
1 cup low fat buttermilk
sprinkle ground nutmeg

Spray pie pan with butter spray, including sides. Press bread crumbs into pie pan, using butter spray to help bread crumbs stick to sides of pan. Toast in oven at 375 degrees for 6-8 minutes. Set aside.

In a large skillet saute vegatables & seasonings using oil spray, sherry, & chicken broth for 10-15 minutes. Spread layer of chevre into bottom of pie pan. Place vegetables on top of cheese. In a bowl beat eggs & buttermilk. Pour over pie. Sprinkle shredded cheese over top.

Bake uncovered at 375 for 30 minutes or until a knife inserted in middle comes out clean & cauliflower is tender. Sprinkle with ground nutmeg.

"Spread layer of chevre into bottom of pie pan."

If you put chevre in blender with an egg or egg beaters it is much easier to spread layer into bottom of pie pan (over toasted bread crumbs).
