Guacamole
6 large avacados
2 medium tomatoes
1/2 white onion
1/4 cup of shredded cilantro
2 small limes
salt to taste
Peel and crush the avacados in a glass or ceramic bowl. NOT METAL. finely dice the tomatoes, onion and cilantro, and blend into the smooth avocado. Add the lime and salt to taste, toss one of the avocado pits into the bowl. Refrigerated for only 15 minutes, using a lettuce leaf to cover the dish instead of plastic wrap. This will help to avoid darkening of your guacamole.
