Sweet Potatoe casserole
3 cups mashed sweet potato ( fresh is better but can will do)
1 cup sugar
1/2 cup melted butter
2 eggs, well beaten
1 teaspoon vanilla
1/3 cup milk
combine sweets, sugar, butter, eggs, vanilla, milk and mix well. place in 2 quart dish. sprinkle on topping.
Topping:
1/2 cup brown sugar, Packed
1/4 flour
2 1/2 tablespoons melted butter
1/2 cup chopped nuts, I always use pecans
Bake 350 for 25 minutes uncovered
right before removing. I throw on miniature marshmallows. I don't let them brown, I just let them puff up and get soft and gooey. They really add a great touch to this surprisingly. I never thought I would like this. But my duaghter begged for this one holiday. she won me over on this and now it is not complete without the marshmallows. Dont add alot just sprinkle some on.
