Spinach Balls
2 10 oz pkg CHOPPED SPINACH; COOKED AND DRAINED
2 -3 cups PEPPRIDGE FARM HERB STUFFING (not cubed)
2 ONIONS; CHOPPED FINE (can use 1)
6 EGGS; BEATEN
3/4 cup MELTED BUTTER
1/2 cup PARMESAN CHEESE
1 teaspoon GARLIC
1/2 teaspoon THYME
1/4 teaspoon pepper
1 teaspoon Accent, optional
Mix all together. Refrigerate until well chilled. Roll into a small ball and cook on greased cookie sheet in 350 degree oven for 20 minutes. This can be frozen before or after cooking. Serve hot.
Recipe says to thaw for 1 hour before baking if frozen.
Recipe also says freeze 1 hour on cookie sheet before baking. I have never done this.
