BOILED FRESH BLACKEYED PEAS
MAKES 4 SERVINGS
3 pounds black-eyed peas
1 teaspoon salt
11/2 quarts boiling water
1 (1/4-pound) piece lean bacon, cut
in large chunks
1/8 teaspoon pepper
shell peas (if in shell), place in pan., add salt, water, and bacon, cover, and
boil slowly
1- 11/2 hours or until desired tenderness. check pot occasionaly
and add more water if necessary, season with pepper,
