This is a
great cheesecake for diabetics. 2 8 oz pkg cream cheese 1/2 cup splenda granular
2 eggs 1/2 cup sour cream
1/2 t vanilla
Cream splenda and cream cheese, add eggs 1 at a time and blend well, stir in sour cream and vanilla, pour into ready crust (shortbread or graham cracker). Bake at 325 for 35-45 minutes until knife inserted in center comes out clean. For additional flavor, puree 1 cup of blueberries and swirl through pie.
