A Delicious Fruit Cobbler

Ingredients:

2 cups apples, cherries, or berries.
(If canned use 2 cans fruit)
3 tablespoons cornstarch
3/4 cup sugar
1 tablespoon grated lemon peel
3 tablespoon butter
1 cup softed flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup shortening
1 teaspoon vanilla extract
1 egg

Directions:

Preheat oven to 350F. Combine butter, lemon peel and fruit. Add cornstarch, 3/4 cup sugar, cook, stirring constantly until thickened. Pour into 10" x 6" baking dish; let stand while making topping.

Sift flour, 3/4 cup sugar, baking powder, and salt into mixing bowl. Add milk, shortening, vanilla and egg. Beat at medium speed for 2 to 3-minutes. Spoon over sauce in baking dish. Bake in preheated oven for 40-minutes.

Yields: 8 servings

Boiled Frosting:

3 cups sugar
1-1/3 cups water
2 egg whites
1/2 teaspoon vanilla

Directions:

Cook sugar and water until it hairs. Beat egg whites until stiff. Pour syrup slowly upon egg whites, beating constantly all the while the syrup is being added to the eggs. Beat frosting until it becomes too thick to manage beater, then use spoon and beat until very thick. Add flavoring and when cool spread on cake.
