Apple Walnut Cake & Apple Yeast Bread

Apple Walnut Cake:

Ingredients:

1 cup butter or margarine,
softened
2 cups sugar
3 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon grround mace
3 cups chopped peeled
baking apples
2 cups chopped walnuts

Directions:

Preheat oven to 325 degrees. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine flour, baking powder, cinnamon, salt and mace; gradually add to creamed mixture.

Sti in apples and nuts. (batter will be very stiff). Spoon into a greased and floured 10-inch tube pan. Bake at 325 degrees for 1-hour and 25 minutes or until cake test done. Cool 10-minutes in pan before removing to wire rack to cool completely.

Yields: 16 servings

Apple Yeast Bread:

2 Tbsp. butter or margarine, melted
1/2 cup sugar
1 teaspoon ground cinnamon
1 large baking apple, peeled and thinly sliced
1/4 cup raisins
1 package (1/4-oz.) active dry yeast
3/4 cup warm water (110 to 115 degrees)
1/4 cup sugar
1 teaspoon salt
2-1/4 cups all-purpose flour, divided
1 egg, slightly beaten
1/4 cup shortening

Directions:

Preheat oven to 350 degrees. Pour butter into a 9-in. square baking pan. Mix sugar and cinnamon; sprinkle over butter. Arrange apple slices in pan. Sprinkle with raisins.

In a mixing bowl, combine yeast, water, sugar and 1 cup flour; beat for 1-2-minutes. Add egg, shortening, and remaining flour. Beat for 1-minute. Drop by spoonfuls over apples. Cover and let rise in a warm place untitl almost doubled, about 1 hour. Bake in preheated oven for 30 to 35-minutes or until test done. Invert pan on a serving platter.

Yields: 9 servings
