Chocolate-Glazed Banana Cake

Preparation Time: 25 minutes
Bake Time: 35 to 40 minutes

Ingredients:

2-1/2 cups cake flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 medium, ripe bananas, mashed
1/4 cup sour cream
1 teaspoon vanilla extract
2/3 cup butter, softened
1-2/3 cups granulated sugar
2 large eggs

Glaze and Garnish:

2 ounces (2 squares) semisweet

1 tablespoons granulated sugar
1/4 cup sour cream
1/4 cup chopped walnuts (1-ounce)

1. Preheat oven to 350 degrees. Grease a 9-inch tube pan. Dust with flour; tap out excess.

2. Mix together flour, baking powder, baking soda, and salt.

3. Mix together bananas, sour cream, and vanilla.

4. Beat together butter and sugar at medium speed until light and fluffly. Beat in eggs, 1 at a time, beating well after each addition.

5. At low speed, alternately add flour mixture and banana mixture to butter mixture, beating until smooth. Pour batter into prepared pan.

6. Bake cake until a toothpick inserted near center comes out clean, 35 to 40 minutes. Transfer pan to wire rack to cool for 10 minutes. Turn cake out onto rack to cool completely.

7. To prepare glaze, in small saucepan, melt chocolate over low heat, stirring constantly. Stir in sugar. Remove from heat; stir until slightly cooled. Stir in sour cream until smooth. Drizzle glaze over top of cake. Sprinkle with nuts.
