Vanishing Butter Cookies

Vanishsing Butter Cookies:

1 (18-ounce ) box butter cake mix
1 (3.4 ounce) package instant butterscotch
pudding mix
1 cup oil
1 egg, beaten
1-1/4 cups chopped pecans

Preheat oven to 450 degrees.
Mix cake and pudding mixes by hand and stir in oil. Add egg, mix thoroughly and stir in pecans.
Place dough on baking sheet by teaspoonfuls abaout 2-inches apart.
Bake for 8 to 9 minutes. (Do not overcook)

Lemon Cookies:

1/2 cup (1 stick) butter, softened
1 cup sugar
2 tablespsoons lemon juice
2 cups flour

Cream butter, sugar and lemon juice and slowly stir in flour.
Drop by teaspoonfuls onto ungreased baking sheets
Bake at 350 degrees for 14 to 15 minutes

Brown Sugar Cookies:

3/4 cup packed brown sugar
1 cup (2 sticks) butter, softened
1 egg yolk
2 cups flour

Cream sugar and butter until light and fluffly. Mix in egg yolk. Blend in flour. Refrigerate dough for 1-hour.
Form dough into 1-inch balls, flatten and criss-cross with a fork on lightly greased baking sheet.
Bake at 325 degrees for 10 to 12 minutes or until golden.

Yummy Cookies:

2 egg whites
1-1/4 cups sugar
2 teaspoons vanilla extract
3-1/2 cups frosted corn flakes
1 cup chopped pecans

Preheat oven to 250 degrees.
Beat egg whites until stiff and gradually add sugar and vanilla.
Fold in frosted corn flakes and pecans and drop by teaspoonfuls on baking sheet lined with wax paper.
Bake for 40 minutes.

Easy Peanut Butter Cookies:

1 (18-ounce) package sugar cookie dough
1/2 cup creamy peanut butter
1/2 cup miniature chocolate chips
1/2 cup peanut butter chips
1/2 cup chopped peanuts

Preheat oven to 350 degrees.
Beat cookie dough and peanut butter in large bowl until blended and smooth.
Stir in chocolate chips, peanut butter chips, and peanuts and mix well.
Drop dough by heaping tablespoonfuls onto ungreased baking sheet.
Bake for 15 minutes and cool on wire rack.

Devil's Food Cookies:

1 (18-ounce) devil's food cake mix
1/2 cup oil
2 eggs
1/4 cup chopped pecans, optionsl

Preheat oven to 350 degrees
1/2 cup oil
2 eggs
3/4 cup chopped pecans, optional

Preheat oven to 350 degrees.
Combine cake mix, oil, and eggs in bowl and mix well.
Drop by teaspoons onto non-stick baking sheets.
Bake for 10 to 12 minutes
Cool and remove to wire rack.
