Banana-Sour Cream Bars

Ingredients:

1 cup dairy sour cream
1-1/2 cups granaulated sugar
1/2 cup margarine or butter, softened
2 eggs (slightly beaten)
1-1/2 cups mashed bananas (about 3 large)
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/2 cup chopped nuts

Heat oven to 375 degrees. Mix sugar, sour cream, margarine and eggs in large mixing bowl on low speed, scraping bowl occasionally, 1 minute.

Beat in bananas and vanilla on low 30 seconds. Beat in flour, salt & baking soda on medium speed, scraping sides of bowl.

Stir in nuts. Spread in greased and floured jelly-roll pan. 15-1/2 x 10-1/2 x 1-inch. Bake until light brown. Bake for 20 to 25 minutes.

Frost with Vanilla glaze. Cut into bars, 2 x 1-inch. Yields about 6 dozen.

Vanilla Glaze Mix:

2 cups powdered sugar
1/4 cup margarine or butter, softened
1-1/2 teaspoons vanilla
2 tablespoons hot water

Stir in 1-2 teaspoons additional hot water until smooth and of desired consistnecy.
