Spicy Zucchini and Bacon Canapés

  • 1 (4 oz) carton low-fat cottage cheese, well drained
  • 2 green onions, finely chopped
  • ½ TBS jalapeno pepper, finely chopped
  • ½ tsp garlic powder
  • 2 medium zucchini, cut into ¼ - inch slices
  • 8 slices turkey bacon, cooked and crumbled
  • 2 TBS red pepper, finely chopped or 6 cherry tomatoes quartered
  • Combine cottage cheese, green onions, jalapeno, and seasoning in a small bowl. Mound the cheese mixture on top of zucchini and top with bacon. Sprinkle with red pepper or cherry tomato quarter. Garnish with fresh chives if desired. Makes 22-24 servings at 17 calories each.
