Pork Chops With Sweet Potatoes & Apples

Remember when there was a ban on spinach? A lot of people kinda freaked out about what to eat in it’s place. Here’s your primer on dark leafy greens.

  • Arugula - Has a peppery and slightly bitter flavor, it can really wake up a boring salad. Some supermarkets sell it in small bunches, but more often you’ll find it in the bagged salad mixes.
  • Bibb lettuce - This is a flavorful lettuce, and it tends to be a tad more expensive, but you’re worth it right?
  • Escarole - The young leaves are the tenderest and are best used for salads, also has a slightly bitter flavor.
  • pRadicchio - Also known as red chicory. The red colored, slightly, bitter leaves make this a standout, for best taste mix with other greens.
  • Romaine lettuce - Keeps longer than most lettuce. Typically used for Caesar salad.

Whatever shall you have with these healthy salad greens? How about, Pork Chops with Sweet Potatoes and Apples. If pork doesn’t appeal to you, substitute chicken breasts or turkey cutlets.

Pork Chops with Sweet Potatoes and Apples
  • 2 pork chops, 3 oz each
  • ¼ cup diced onion
  • ½ cup chicken broth
  • ¼ cup apple cider
  • 3 TBS all purpose flour
  • Salt and pepper to taste
  • 1 small sweet potato, sliced
  • 1 apple sliced

Mix the flour and seasonings in a small bowl and dredge the pork chops. An easier method is to combine flour and seasonings in a plastic or brown lunch bag, add the pork chops and shake to coat them. Prepare a nonstick skillet with olive oil or butter flavored spray. Heat over medium-high heat. Add chops and brown, each side should take about 3 minutes. Remove from skillet after browning.

In the same skillet add a couple of tablespoons of chicken broth and the onions. Cook till the onions are tender. Cooking them this way also brings out their sweetness. Add cider and remaining broth. Next add the chops, sweet potato and apple. Cover, reduce heat to low and simmer until the sweet potato and apple are tender. You can speed the process by cooking the sweet potato in the microwave for about 3 minutes, no longer than that or it will be mushy when you cook it with the other ingredients. Makes 2 servings at 300 calories each.
