What is Panko? This is a Japanese style bread crumb. By using panko in your cooking, you can get the crunch without frying. Try mixing panko, corn meal, and flour together with your favorite dry seasonings. If you're not sure, try white pepper, salt, powdered ginger and sage. Dip the chicken pieces (skin on and bone in) in a mixture of milk and eggs and then roll the chicken in the seasoned panko. Drizzle a few drops of oil on top of the chicken. Put in a preheated oven at 400 degrees for about an hour, or until the chicken has an internal temperature of 170 to 180. If you are using a convection oven, set the temperature of your oven at 350.
