MONTEREY JACK TILAPIA

MONTEREY JACK TILAPIA

1lb tilapia fillets, thawed
salt and pepper
1 14.5 oz can petite diced tomatoes
2-3 green onions, chopped
½ C fresh parsley(chopped)
2 tbs cooking oil
1 lb Monterey Jack cheese
Parmesan cheese(sprinkle to taste)

Preheat oven to 450° Coat shallow pan with cooking oil and place fish fillets. Sprinkle fish with
salt and pepper. In a bowl, combine tomato, onion, parsley, olive oil. Spoon over fish. Bake fish

for about 8-10 minutes, or until it flakes easily when tested with a fork. Turn off oven, cover fish
with Jack cheese and return to oven just to melt the cheese. Sprinkle with Parmesan cheese
before serving.
