LINGUINI and PORK CHOPS 6 thin boneless pork chops 1 box linguini 1 26oz can tomato and basil marinara sauce 2 tbs dry basil 3 tbs olive oil 2 tbs butter 1 c Italian bread crumbs 1 c all purpose flour 2 eggs 2 c mozzarella cheese(shredded or sliced) Parmesan cheese Prepare linguine as per box instructions. When complete add 1 tbs olive oil, 2 tbs butter and 2 tbs dried basil, mix well and put into a deep, oven proof, casserole dish. Heat a frying pan to medium and add 2 tbs olive oil. In three separate bowl put bread crumbs, flour, and eggs for dredging. Dredge pork chops in flour, egg and then bread crumbs. Brown on each side for two minutes. Place on top of linguini, cover with marinara sauce, mozzarella cheese and then Parmesan cheese. Bake at 350° for 35 - 40 minutes or until golden brown.
