Chilled Picante Gazpacho
4 servings (about 1 cup each)
You can serve this soup as a starter or as a light main dish--either way, it's refreshing, delicious and a snap to make.

1 can (28 ounces) whole peeled tomatoes
3/4 cup Picante Sauce
2 tablespoons lemon juice
1 tablespoon chopped fresh cilantro leaves
1/4 teaspoon garlic powder or 1 clove garlic, minced
1 cup thickly sliced cucumber
1 stalk celery, cut into 1-inch pieces
1 slice firm White Sandwich Bread
1/4 cup chopped cucumber
Sliced green onion
Place the tomatoes, picante sauce, lemon juice, cilantro, garlic powder, sliced cucumber, celery and bread into a blender or food processor. Cover and blend until smooth. Refrigerate for at least 2 hours.
Top with the chopped cucumber. Garnish with the onions.

Tired of the same old tuna salad? Try this version that features hard-cooked eggs, olives and croutons...it's really easy to make and it's uniquely delicious.

2 small heads romaine lettuce, torn into bite-sized pieces (about 10 cups)
2 cans (about 6 ounces each) tuna packed in water, drained and flaked
4 hard-cooked eggs, cut into wedges (optional)
4 tablespoons sliced pitted ripe olives
2 small red onions, sliced (about 1/2 cup)
1 cup Seasoned Croutons
1/2 cup prepared Italian salad dressing
Arrange the lettuce, tuna, eggs, if desired, olives, onion, and croutons on 4 plates.
Drizzle with the dressing.

4 containers (6-to 8-ounce) fruit-flavored yogurt
4 Cookies (1 cookie per serving), any variety, crumbled
Fresh blueberries, cut-up strawberries or raspberries (or whatever's on sale)
Spoon half the yogurt into a glass. Top with half the crumbled cookie and half the berries.
Top with the remaining yogurt and berries. Sprinkle with the remaining crumbled cookie.
