Southwestern Turkey Burgers
Zesty Vegetable Kabobs
Creamy Pistachio Dessert

Southwestern Turkey Burgers
serves 2

10 oz ground turkey
1 oz silken tofu (2 tablespoons)
1/2 tsp ground cumin
1/4 tsp minced garlic
Cooking spray
1/2 medium avocadoes (6 slices)
2 tbsp sour cream
4 green lettuce leafs

1. Preheat oven to 350°F.

2. In mixing bowl, combine ground turkey, tofu, cumin, and garlic. Mix well. Form two patties.

3. Heat oven-proof skillet over medium heat. Mist both sides of each burger with cooking spray. Cook 3-1/2 minutes per side.

4. Transfer skillet to oven and bake five minutes or until cooked through.

5. Let stand 5 minutes to cool slightly. Place each burger on piece of lettuce leaf. Top each burger with three slices of avocado, 1 tablespoon of sour cream and remaining lettuce slices.

Zesty Vegetable Kabobs

3 long (9) skewers
1 Tablespoons oil
3/8 teaspoons dry italian seasoning
1/4 teaspoon salt
1/8 teaspoon pepper
1 zucchini and/or yellow squash, halved lengthwise, cut into 1" thick half moons
1/2 large red onion, quartered and cut into 3 wedges
1 cup cherry tomatoes, 6 ounces.
1 1/2 Tablespoons chopped fresh mint

1. If using wooden skewers, soak in water 30 minutes, drain.

2. In a cup, combine oil, salt and pepper. Thread squash and onion onto skewers; brush all sides with oil mixyure. Grill over direct heat until veggies are tender, turning once, 3-5 minutes per side. Remove from grill. When cool enough to handle, add tomatoes to kabobs. Sprinkle with mint.

Creamy Pistachio Dessert
serves 4

1/2 tub (12 oz) fat-free cream cheese
1/8 tsp vanilla
3 tbsp Equal sweetener
1 cups cold skim milk
1/2 pkg (1 oz) sugar-free instant pistachio pudding
12 low-fat chocolate wafers (like vanilla wafers)

In food processor, combine cream cheese, vanilla, and sweetener. Process until smooth.
In medium bowl, combine cold milk and pudding mix, and whip or beat for 2 minutes. Pour into food processor with cream cheese mixture and process until thoroughly mixed.
Line bottom of 4-inch round or square dish with 10 chocolate wafers. Save 2 wafers to crumble and garnish top.
Pour pudding mixture over wafers.
Sprinkle top with wafer crumbs.
Chill about 1 hour and serve.
