1/2 of a 17.3-ounce package Puff Pastry Sheets (1 sheet), thawed
1 egg
1 tablespoon water
1 cup shredded Cheddar cheese (about 4 ounces)
1/4 cup Chunky Salsa
5 pitted ripe olives, cut into quarters (optional)
chili powder

Preheat the oven to 400ºF.

Beat the egg and water in a small bowl with a fork or whisk. Stir the cheese and salsa in a small bowl.
Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 15 x 12-inch rectangle.
Cut into 20 (3-inch) squares.

Place about 1 tablespoon cheese mixture in the center of each pastry square. Top each with 1 olive piece, if desired. Brush the edges of the pastry squares with the egg mixture. Fold the pastry over the filling to form triangles. Crimp the edges with a fork to seal. Place the filled pastries onto baking sheets.

Brush the pastries with the egg mixture and sprinkle with the chili powder. Bake for 15 minutes or until the pastries are golden brown. Remove the pastries from the baking sheets and let cool on wire racks for 10 minutes.

Tortilla Pinwheels

8 ounces dairy sour cream
1 (8-ounce) package cream cheese, softened
1 can (4-ounce) diced green chilies, well drained
1 can (4-ounce) chopped black olives, well drained
1 cup grated cheddar cheese
1/2 cup chopped green onion
garlic powder, to taste
seasoned salt to taste
5 (10-inch) flour tortillas
fresh parsley, for garnish
salsa

Mix all the filling ingredients together thoroughly.

Divide the filling and spread evenly over the tortillas; roll up tortillas.

Cover tightly with plastic wrap, twisting ends; refrigerate for several hours.

Unwrap; cut in slices 1/2 inch to 3/4 inch thick. Discard ends.

Lay pinwheels flat on glass serving plate; garnish with parsley.

Leave space in center of plate for small bowl of salsa, if desired.

2 tablespoons cornmeal
1 tablespoon chili powder
3 packages (8-ounces) cream cheese softened
2 large eggs
2 teaspoons garlic powder
1 1/2 teaspoons ground cumin
2 cans (4-ounces) Ortega diced green onions, divided
1 jar of Ortega salsa- homestyle recipe (mild)
2 cups Cheddar cheese, shredded and divided
tortilla chips, to dip

Preheat oven to 325ºF. Heavily grease bottom and side of 9-inch springform pan.

Combine corn meal and chili powder; sprinkle over bottom and side of prepared pan.

Beat cream cheese, eggs, garlic powder, and cumin in large mixer bowl until smooth; stir in chiles and 1/2 cup green onion. Pour half of batter into pan.

Spoon 1 cup salsa over top of batter; sprinkle 1 1/2 cups cheddar cheese over salsa. Spread remaining batter over top of cheese.

Bake for 55 to 60 minutes or until edges are set but center still moves slightly.

Cool completely in pan on wire rack; remove side of springform pan. Spread remaining salsa over top; sprinkle with remaining cheese and green onion. Serve with tortilla chips.

Acapulco Jicama Salad

1/2 cup cilantro, minced
4 tablespoons lime juice
4 tablespoons white wine vinegar
4 tablespoons oil
1 teaspoon kosher salt
1/2 teaspoon pepper
6 oranges, peeled and sliced into 1/4 inch circles
2 avocado, peeled pitted and sliced into 1 inch cubes
1 medium jicama, peeled and sliced into 1/2 inch cubes
36 red-leaf lettuce leaves, washed dried and torn into pieces

Whisk together cilantro, lime juice, vinegar, oil, salt, and pepper.

Marinate orange slices, avocado, and jicama in lime-cilantro vinaigrette for 30 minutes.

Arrange lettuce in a large salad bowl. Remove orange, avocado, and jicama from marinade and place on lettuce.

1 box white cake mix
1 container Coolwhip (light or regular)
1 large package strawberry Jell-O
1 box frozen, sweetened strawberries, drained
2 cups fresh strawberries, sliced

Prepare cake mix as directed. Bake in 13 x 9 cake pan as directed.

Remove from oven and poke holes in cake with fork. Every two to three time you poke the cake, turn the fork so as to make bigger holes. (If the holes are not big enough, the Jello will not seep down into the cake). Make sure you poke all the way to the bottom if possible.

Prepare Jello using one-half the amount of water. Pour Jello over the top of the cake, covering it completely. Place in refrigerator to cool.

Add thawed sweetened, drained strawberries to the Coolwhip. Place in refrigerator.

Once the cake has completely cooled, frost with the Coolwhip mixture and top with fresh sliced strawberries.

Berry Lemonade -- Non-Alcoholic
Make several containers of lemon slices, sweetener in the fridge waiting for the next batch to be used. Use sparkling water instead of tap water for an extra touch.

1/2 cup sugar or you favorite sweetener to taste
3 cups water or sparkling water
Berry ice cubes

Mix sliced lemons with sugar in a large pitcher. Add water and stir vigorously. Let sit at least 30 minutes. Add berry ice cubes and serve.

To make the berry ice cubes,
fill ice trays halfway with water and freeze. Add a berry to each compartment, add water and freeze again.
