Lazy Man's Cheap Cabbage Rolls

This was a family staple growing up. Simple to make, the cabbage is stuffed with ground beef and rice and then topped with Mozzarella cheese. Hearty, cheesy, and delicious, make this casserole recipe for your family tonight.

1 pound hamburger
1 medium head cabbage
1 large jar of spaghetti sauce
1 cup minute rice
Mushrooms, fresh and sliced or canned that are well drained
Mozzarella cheese, grated

Preheat oven to 250ºF.

Brown hamburger in a skillet. Shred the cabbage.

In a large greased casserole place a layer of shredded cabbage, then cover with browned hamburger, mushrooms and rice.

Cover with remaining cabbage. Pour over spaghetti sauce. DO NOT put the cheese on there until the last 30 minutes of cooking cycle.

Bake at until cabbage is tender and sauce is fairly well absorbed, about 2 to 2-1/2 hours. Garnish with cheese.

3 Bean Salad
This is a very basic variation on 3 Bean Salad. The addition of corn gives this recipe some color and crunch.

1 can black beans, rinsed
1 can kidney beans, rinsed
1 can pinto beans, rinsed
1 small can corn, drained
1 onion, chopped finely
1/2 cup sugar
1/3 cup oil
1/4 cup vinegar

Mix all ingredients. Refrigerate for a couple of hours before serving.

Note:
For an easy, quick variation image my three bean salad using 1 can each green beans, garbanzo beans, black beans, and Zesty Italian dressing.

Granola Strawberry Parfait

Parfait is the French word for perfect. That's about the best way to describe the taste of this luscious low-fat, whole grain dessert - edible proof that granola is not just breakfast fare!

1 1/2 cups low-fat ricotta
1/4 cup low-fat, plain yogurt
5 tablespoons tablespoons strawberry jam
1 teaspoon grated orange zest
1 1/4 pounds strawberries, trimmed
1 1/2 cups your favorite Granola
fresh mint leaves, for garnish

Puree ricotta, yogurt, and jam in a food processor. Stir in orange zest.

Reserve 6 small strawberries for garnish; cut remaining strawberries into thick slices.

Spoon 2 tablespoons Flax Plus Granola into each glass. Top with 2 tablespoons of ricotta mixture and a thick layer of strawberry slices. Repeat with a second layer of granola, ricotta, and strawberries. Top with a whole strawberry, and garnish with a few mint leaves.

Serve immediately or refrigerate until needed, up to 6 hours

Notes
If you don't have 6 tall parfait glasses, use wine goblets or drinking glasses or bowls.
