Melt in Your Mouth Pork Chops

1 tablespoon vegetable oil
6 (1-inch-thick) boneless center-cut loin pork chops
1/2 teaspoon salt
1/2 teaspoon black pepper
12 pitted prunes
3 small onions, thinly sliced
1/2 cup water
2 tablespoons brown sugar
2 tablespoons cider vinegar
Heat vegetable oil in a large skillet over medium-high heat. Sprinkle pork chops with salt and pepper. Cook pork chops in hot oil 5 minutes on each side or until browned. Drain.
Add prunes and remaining ingredients to skillet. Cover, reduce heat to medium, and simmer, stirring occasionally. 30 minutes or until meat is tender.

8 sweet potatoes
16 tablespoons (1 stick) butter
6 tablespoons lemon juice
4 tablespoons finely chopped fresh parsley
1/2 teaspoon salt
Preheat oven to 400 degrees F.
Scrub sweet potatoes and pat dry. Cut potatoes in half lengthwise; prick skins with a fork. Place cut-side down in a greased shallow baking pan. Bake 35 to 40 minutes or until tender.
