Ham and Pepper Stack
serves 6
For an easy crowd-pleasing recipe that really stacks up, try our Ham and Pepper Stack. An Italian bread loaf loaded with layers of a honey-mustard and cream cheese spread, deli ham, Swiss cheese and more, it’ll score you big entertaining points!

1 (16-ounce) round Italian bread loaf
1 (3-ounce) package cream cheese, softened
3 tablespoons honey mustard
1 tablespoon mayonnaise
2 scallions (green onions) sliced
1 pound deli ham, thinly sliced
1/4 cup sliced banana peppers, drained
6 to 8 slices Swiss cheese
3 to 4 leaves romaine lettuce
1 tomato, sliced
Cut off top 1/3 of bread loaf and reserve top. Scoop out soft center of bottom part of bread loaf, leaving a 1/4-inch-thick shell.
In a medium bowl, combine cream cheese, honey mustard, mayonnaise, and scallions; mix well then spread in bottom of bread shell and on cut side of bread top.
Layer ham and remaining ingredients over cream cheese mixture; cover with bread top. Cut into 6 wedges and serve.
Black Bean Chipotle Hummus
Makes 2 cups hummus dip.
We've switched out the garbanzo beans with black beans for a southwestern-style Black Bean Chipotle Hummus that's a change of pace from traditional hummus.

2 (15-ounce) cans black beans, drained with 1/4 cup liquid reserved
3 garlic cloves, chopped
1/2 chipotle pepper plus 1 tablespoon adobo sauce (from can)
3 tablespoons fresh lime juice (3 to 4 limes)
2 tablespoons olive oil
1/4 teaspoon salt
1/2 cup packed fresh cilantro
Combine all ingredients in a food processor. Process until mixture is smooth and creamy, and no lumps remain, scraping down sides of bowl as needed. Serve immediately, or cover and refrigerate until ready to serve.
How to make baked Pita Chips.
Great way to use pita bread to bake a healthy snack. An easy pita bread baked chips recipe with olive oil and sea salts. 1) Preheat oven at 400 Degrees F
2) Using Pita Bread, cut the round pita in half, then into triangle shapes.
3) After cutting them into triangle shapes, seperate the pita in half. Your left with a thin triangle pita shape.
4) Place on a baking sheet wrapped in foil, keep flat at one layer. Do not over lap or it will not get crispy.
5) With a pastry brush dab with a little extra virgin olive oil.
6) Then sprinkle with a sea salts to taste.
7) Season with herbs and spices of choice (optional)
Place
in the oven and bake for 6 minutes, take the tray out after the cooking time,
flip over and place back in the oven for another 6 minutes or until desired
crisp is achieved. (cooking time depends on your oven, so do make sure to check
often so it does not burn)

It's no wonder this was a popular snack on the plantations of the deep South. Even before we had refrigeration, everyone enjoyed the cool refreshing taste of fresh fruit! And today, we still love these same flavors...with a few little extras thrown in!

4 large Red Delicious apples, cored and cut into bite-sized pieces
4 oranges, peeled and sectioned
4 bananas, cut into bite-sized pieces
2 pears, cored and cut into bite-sized pieces
1/2 cup coarsely chopped pecans
1/2 cup maraschino cherries, quartered
1 cup mayonnaise (I use low-fat lemon yogurt)
In a large bowl, combine all ingredients except mayonnaise (or lemon yogurt).
Add mayonnaise (or lemon yogurt) and gently mix to coat fruit pieces. Cover and chill for at least 2 hours before serving.
