PANKO CRUSTED TILAPIA AND BOW TIES

Apple Pie with Red Hots And Walnuts

PANKO CRUSTED TILAPIA AND BOW TIES
MAKE 4 SERVINGS

4 tilapia fish fillets
1/2 cup Italian seasoned panko bread crumbs
1/2 tsp salt
1/4 tsp pepper
1/2 pound bow tie pasta
10 oz container Brussels sprouts, trimmed and halved
3 tbs olive oil
4 cloves garlic, peeled and chopped
1/8 tsp red pepper flakes
1/4 cup grated Parmesan cheese

1). Heat oven to 450 degrees F. Bring a large pot of water to boiling. Coat a broiler safe baking pan with cooking spray. Place tilapia fillets in pan, skin side down, and coat lightly with cooking spray. Season fish with 1/4 tsp salt and pepper. Sprinkle 2 tbs panko crumbs over each fillet. Bake 10 min.
2). Boil bow ties 4 minutes. Add Brussels sprouts and cook an additional 5 minutes. Drain, reserving 1/2 cup cooking liquid.
3). In a large skillet, heat oil. Add garlic and pepper flakes and cook 30 seconds. Add bow ties, Brussels sprouts, reserved cooking liquid and remaining salt. Cook until heated through. Stir in cheese.
4). Turn up oven to broil. Run fillets under broiler until browned and crisp. Serve with bow ties on the side. Garnish with lemon wedges, if desired, and serve.

ORANGE WATERCRESS SALAD
MAKES 4 SERVINGS

2 navel oranges
4 oz bag watercress
1 small red onion, very thinly sliced
1/3 cup olive oil
1/4 cup orange juice
1 tsp Dijon mustard
1/2 cup cashews

1). Zest 1 orange. Remove peel and pith from oranges, slice into rounds. Arrange watercress on serving platter.
2). Top watercress with orange slices and onions. In bowl, whisk together oil, orange juice, mustard and 1/2 tsp orange zest.
3). Season dressing with salt and pepper, if desired. Drizzle dressing over salad and top with cashews, then serve.

Apple Pie with Red Hots And Walnuts

6 c Apples; thinly sliced, peel
2/3 c Walnuts; chopped
1/2 c Cinnamon red hot candies
1/3 c + 2 tbs sugar
1/3 c flour
2 Frozen deep dish pie crusts

Preheat oven to 375 degrees F and place a baking sheet in the oven to preheat also.

In large bowl, toss together apples, walnuts, candies, 1/3 cup sugar and flour. Pour into one frozen pie crust. Break or crumble the other frozen pie crust into very small pieces; toss with remaining 2 tbs sugar.
Sprinkle over apples. Bake in preheated 375 degrees F oven on a preheated baking sheet 55-60 minutes or until candies melt and bubble through the crumbled crust. Cool completely before serving.

If you want to simplify your life, you can use a can of Comstock Apple Pie Filling and nobody but you will notice the difference.
