QUINOA & RED BEAN BURRITOS
Spinach Soup
DOUBLE CHOCOLATE BROWNIES

QUINOA & RED BEAN BURRITOS
MAKES 8 BURRITOS.
1 cup quinoa (Quinoa is found in the rice and dried bean aisle of the supermarket)
2 tsp smoky sweet pepper blend
15 oz can red kidney beans, drained, rinsed and lightly mashed
1 1/2 cups salsa
8 whole wheat tortillas
1 cup shredded Mexican cheese blend
1. Place quinoa and pepper blend in a saucepan and cook following package directions. Stir in beans and 1 cup salsa.
2. Heat oven to 350 degrees. Coat baking sheet with cooking spray.
3. Heat tortillas in microwave 45 seconds to soften. Place 1/2 cup quinoa mixture in center of each tortilla and fold like a package. Place seam side down on baking sheet.
4. Coat burritos with cooking spray and top with remaining salsa and cheese. Bake burritos 12 min. or until heated through, with cheese melted. Serve with additional salsa.
Spinach Soup
3 pounds fresh spinach, or 3 10-oz. packages of frozen
One third cup butter
2 and one half cups milk
2 and one half cups water
One eighth tsp. ground nutmeg
Salt and fresh ground pepper
One half cup heavy cream
2 Tbsp. parsley, chopped
7 Tbsp. fresh grated Parmesan cheese
Wash spinach, remove stems and then cook damp spinach in covered pan over medium heat until just wilted. Drain and allow to cool. With the frozen spinach, you can just let it thaw. Drain spinach and squeeze to remove excess moisture, then chop. Heat butter in pan and saute spinach for a minute or two. Add milk, water, nutmeg, salt, pepper and heat to just boiling. Lower heat immediately to simmer and cook for 5 minutes. Add the cream, parsley and cheese and serve immediately.
The Skinny: Use low fat milk and fat-free Half and Half in place of the cream.
DOUBLE CHOCOLATE BROWNIES
MAKES 24 BROWNIES.
3/4 cup unsalted butter
4 oz unsweetened chocolate
2 cups sugar
4 large eggs
1 1/4 cups all purpose flour
2 tsp vanilla
1 cup chopped pecans
12 oz bag chocolate chips
1. Heat oven to 350 degrees F. Line 13x9x2" baking pan with foil, leaving overhang.
2. In glass bowl, heat butter and chocolate in microwave on high 2 min. stir until smooth. Let stand 5 min. to cool slightly. Whisk in sugar, eggs, flour and vanilla. Stir in pecans and half of the chocolate chips. Transfer batter to pan. Sprinkle with remaining chocolate chips.
3. Bake 35 minutes or until top is dry to the touch. Let cool completely in pan. Lift brownie from pan with foil. Cut into squares and serve.
