Brothy Shrimp & Rice Scampi Menu for 4

Brothy Shrimp & Rice Scampi
Green peas or French-cut green beans
No Fuss Fruit Pie

The Recipes

Brothy Shrimp & Rice Scampi
Serves 4

2 cans (14 oz. each) Chicken Broth (3 1/2 cups)
3/4 cup uncooked regular long-grain white rice
1 tbsp. olive oil
1 lb. fresh or frozen large shrimp, shelled and deveined
4 cloves garlic, minced
2 tbsp. lemon juice
2 green onions, thinly sliced

HEAT broth in saucepan to a boil. Add rice. Cover and cook over low heat 20 min.
HEAT oil in skillet. Add shrimp and garlic. Cook and stir 5 min. or until done.
PLACE shrimp in bowls. Stir lemon juice into rice mixture and pour over shrimp. Top with onions.

Serve with green peas or French-cut green beans.

No Fuss Fruit Pie
Serves 9

1 pkg. Pepperidge Farm® Frozen Puff Pastry Sheets (2 sheets)
1 egg
1 tbsp. water
1 can or jar (21 oz.) fruit pie filling, any variety

THAW pastry sheets at room temperature 30 min. Preheat oven to 400°F. Mix egg and water.
UNFOLD pastry sheets. Place 1 pastry sheet on baking sheet. Spread pie filling on pastry to within 1" of edges. Brush edges with egg mixture. Place remaining pastry sheet over pie filling. Press edges together with fork to seal. Brush with egg mixture. Cut several 2" slits in top of pastry.
BAKE 30 min. or until golden. Cool on baking sheet on wire rack at least 15 minutes. Cut into squares.
