1 CUP SUGAR
2/3 CUP VEG OIL
2 EGGS
1 CUP ORANGE JUICE
2 CUPS FLOUR
1 TBSP BAKING POWDER
1 TBSP BAKING SODA
3/4 TSP SALT
1 ( 11 OZ) CAN MANDARIN ORANGES, DRAINED
1 CUP WHTIE CHOCOLATE CHIPS
TOPPING:
1 CUP FLAKED COCONUT
1/3 CUP SUGAR
2 TBSP BUTTER, MELTED
IN A MIXING BOWL, COMBINE THE SUGAR, OIL, EGGS AND ORANGE JUICE, MIX WELL.
COMBINE DRY INGREDIENTS; STIR IN ORANGE JUICE MIXTURE JUST UNTIL MOISTENED.
FOLD IN ORANGES AND CHIPS.
FILL GREASED OR PAPER-LINED MUFFIN CUPS TWO-THIRDS FULL.
COMBINE TOPPING INGREDIENTS; SPRINKLE OVER CUPCAKES.
BAKE AT 375 f. FOR 15-20 MINUTES OR UNTIL GOLDEN BROWN.
