Ingredients for Prime Rib
1 bone in prime rib roast about 6-8lbs
1 package fresh rosemary (stems removed)
2 bulbs of garlic (roasted)
sea salt and fresh cracked pepper
1 cup of olive oil
1/4 cup of olive oil
4 garlic cloves (peeled)
2 parsnips (peeled)
2 carrots (peeled)
4-6 potatoes (peeled)
1 litre of beef stock
2 cups of red wine (jackson triggs merlot works well)
Ingredients for Yorkshire Pudding
6 eggs
1 cup of flour
1 cup of 2% milk
dash of salt, pepper and nutmeg
Instructions for Prime rib
In a food processor, place the fresh rosemary, all the roasted garlic, olive oil, salt and pepper and puree till mixture is well incorporated.
In your favorite roasting pan of choice, toss all the peeled vegetables in 1/4 cup of olive oil and place in the bottom of the pan cut in good size pieces.
Rub the garlic and rosemary mixture thoroughly over the prime rib roast and place in roasting pan over the vegetables.
Roast in a 400 degree oven for 2 hours or until desired temperature is achieved, but please do not ruin a beatiful piece of meat by cooking any more than medium
Instructions for gravy
Pull the roast out of the oven and remove from the pan letting it rest with a tin foil cover (tenting) for at least 10 minutes
Put potatoes off to the side to keep warm and place remaining ingredients from the roasting pan in food processor and puree till smooth. Transfer to a sauce pot and add beef stock and bring to a boil. Reduce heat to a simmer and cook till desired thickness is achieved
Instructions for Yorkshire Puddings
Place a muffin tin in a 450 degree oven with a little bit of vegetable oil in the bottom of 6 of the muffin tins and pre heat the pan until the oil is smoking hot. Be warned if the oil is not smoking hot then your Yorkshire puddings will stick
In a mixing bowl beat together the eggs, milk, flour and seasonings until smooth and you have incorporated some air into the batter
Place batter in the six oiled muffin pans and bake in the oven for 30 minutes or until the Yorkshires have rose and they are a medium golden brown all around. If they are not that golden brown they will sink, i guarantee it
Good side dishes are roasted vegetables which you could do in the pan as well or steamed asparagus and horseradish is always on my table when i eat prime rib
