Baked Rice Milanaise

1/2 cup chopped onion
1/2 cup chopped green pepper
2 tablespoons vegetable oil
3 cups hot cooked rice
3 hard-cooked eggs, chopped
1 1/2 cups (6 ounces) grated Cheddar cheese, divided use
Salt and ground black pepper to taste
1/2 teaspoon basil leaves, crushed
1 8-ounce can tomato sauce

1. Cook onion and green pepper in oil until tender but not brown.
2. Combine with rice, eggs, 1 cup cheese, salt, pepper and tomato sauce.

3. Turn into buttered shallow 1 1/2-quart casserole.
4. Top with remaining 1/2 cup cheese.
5. Bake at 350 degrees F. 20 to 25 minutes.

Makes 6 servings.

Thanks! With the kids off school over the holidays I just didn't have much online time! My sweet little demons are back to school now (and tormenting their teachers instead of me) so I can play again.
