Cauliflower a la Aunt Colleen

Colleen is an awesome sister-in-law who lives in Minnesota. We were in the same homeroom together all the way through high school in Pennsylvania. We hadn't seen in each other since high school and now we're family!

Cauliflower a la Aunt Colleen

Ingredients
1/4 cup olive oil
2 T butter
1 medium head cauliflower, broken into florets
3 medium cloves garlic, crushed
2 bay leaves

2 t basil
2 cups tomato puree
2 cups mixed grated cheddar and fresh parmesan cheese
1 lb. pasta - small shells work well. I used San Giorgio's Trio Italiano

Heat 2 T olive oil in a large skillet. Add garlic, bay leaf and basil. Saute about
1 minute. Add cauliflower and saute until just tender. Add 1/2 cup water to steam it along. When cauliflower is tender, add tomato puree and simmer 15 minutes. Cook pasta according to directions. Drain and toss with remaining olive oil and butter and half the cheese. Spread onto a platter and pour cauliflower sauce in top. Top with remaining cheese and serve hot.
