Chocolicious Cake

Here we go...just one little instruction here, when I say cup, I mean cup of 2dl. Now, to begin.
You will need:
1 cup of vegetable oil
4 cups of flour
3 cups of sugar
2 cups of mineral water
2 teaspoon of cocoa
1 teaspoon of baking powder
pinch of salt
few drops of vanilla extract
orange and lemon peal

some orange or apricot marmelade (not obligatory, only if you like it)

and for the chocolate icing:
1 square of chocolate, unsweetened or 1/3 cup cocoa
6 tablespoons boiling water
1/3 teaspoon vanilla extract
1 3/4 cups confectioners sugar
some cinnamon, by wish

also, two larger bowls, mixing ladle or better yet a mixer, deep baking pan, some baking paper
Preparation:
In one bowl mix dry ingrediants:flour, cocoa, baking powder, salt andorange and lemon peal. In other, larger bowl, mix sugar and mineral water, until sugar dissolve. Add oil and vanilla extract, and slowly stir in the flour mixture. Mix until smooth, then pour in deeper baking pan, inlaid with baking paper. Bake on temperature of 200C or 392F, for an more then 30 min. (use a wooden pick to check...if pick come out clear, the cake is done)
When cake is done, if wished, spread some marmelade (but you must do it while cake is very hot). If the marmelade is too thick, you can use some boiling water or milk to dilute it. After cake absorb the marmelade, cover it by the icing.
The icing is made like this:
Melt chocolate in top of double boiler, add boiling water and stir until smooth; add vanilla and the sugar; stir until mixture is smooth. Or dissolve 1/3 cup cocoa in boiling water. A little cinnamon may be added.

Let the cake cool, and then the only thing left is to enjoy its sweet, rich taste. If you like it, it goes really well with some whiped cream.
