Honey biscuits

They are easy to do,very old (again, very old, more then five hundred years known!) and very, very tasty. Also, one of my favorites, that can almost always can be find in my house. They are easy to storage and can last and stay fresh long...actualy,they are best after 20-25 days after making! No joke.
You will need 2 eggs,250 gr of honey,250 gr of granulated white sugar (for stronger taste, you may use brown) and 500 gr all-purpose-flour,1 teaspoon of baking soda,1 to 1,5 of cinnamon powder. If you wish, some halfs of wallnuts can be added, too, which I will explain later.

Ok,put your honey in deep pan and put to light heat,to melt.Let it cool a bit,and then add cinnamon. In bowl mix well eggs and sugar, and then add them to honey, always mixing (preferably,bu ladle, not electric mixer).Add flour, mixed with baking soda, and mix some more, until you get a half-thick dough. Now,use teaspoon to make biscuits on well greased and floured baking sheet. All put in oven,on abot 200C,and bake until golden brown. If you want to add some wallnuts, then you will have to make a snow of egg white and dip halfs of wallnut in it.Remove biscuits from oven when they are half baked,"stick" wallnuts to they tops, and move back to oven, until they are golden brown.
That is it.As for storage, you will need a good metal cookie box or cookie jar, close tight.Thease biscuits are soft when they are hot,but become quite hard when they are cold. But,more they "stay" in cookie jar, they will be softer and softer. If you want them to become soft soon, add piece of apple with them.
Enjoy.
