Ratluk

This recipe is more familiar under the name "turkish delight", famous by "Narnia" books. Real name,other then ratluk, is lokum (pronounced as "lockum";)
You will need:
1 kg of sugar cubes (if you don't have them,use 1kg of granulated sugar,but it's not the same)
7.5 dl +2 dl water
150 gr potato starch (corn will be fine,too,but again,not the same)
Advertisement:

half of limun
125 gr (roasted and crushed in mortar) wallnuts
bergamot scent
rose scent and some red/pink food dye
powder sugar (for rolling)
How to make it:
Mix starch with 2 dl water and stir well (there must be no lumps!).Mix 7.5 dl water and sugar,in deep pot,and put it on stove.Cook them until they become thicker (but not to thick,be carefull and try often in glass of water) syrup.Then add starch,stiring all the time (and I really meen:ALL THE TIME!Very important).Continue cooking,until mass is thick enough (like thick dough).Be VERY carefull...this mass is really easy to burn down.When it is ready,remove from stove and add juice of half of limun and bergamont.Now it is for you to decide:rose or wallnuts.If you want rose,put rose scent and some red/pink color.If you want wallnuts,then add wallnuts.You should prepare slightly oiled baking plate with sides (some of deeper ones).Put your ratluk in baking plate,eaven it with knife (it should be 3-4cm high (about one inch)) and leave it to cool (NOT in the fridge) until tomorow (it must pass 24h).Then cut it in cubes and roll every one in powder sugar.
