So here we go:
You will need a one large onion, and some shortening or oil for frying. And for batter, you will need:
1 cup all-purpose flour
2 teaspoons salt
1 1/2 teaspoons baking powder
1 egg (put yolk and white in different bowls)
2/3 cup milk
1 tablespoon salad oil
And now how to make it:
Peel onion and slice it (about 1/4 inch thick). Then, push gently every slice and make them separate into rings.Put them in the deep bowl and cover them with cold water.Let them stay there about 30 min. Then drain them and spread on paper towels,to dry.
In the meantime, make batter.Mix flour, salt and baking powder, sift them together in bowl and set aside. In another bowl, beat egg yolk slightly, then add milk and salad oil.Mix it with the flour mixture and stir until smooth. Then, beat eat egg white until it is very hard and fold into batter, slowly mixing.Heat about 1 inch of shortening or oil in saucepan to 375F. Dip onion rings in batter(notice:let excess batter drip off)Drop several rings at a time into hot oil and fry until golden. Then put to drain on paper towel and serve (in some fancy looking bowl, not on towels
One notice:they are best when are hot...when rings cool, they lose crispyness.
