Thai Coconut Salmon

Ingredients:

4 portions salmon fillets deboned and skin removed
400 mls Coconut Milk
1/4 Cup Sweet chilli sauce
1/2 Cup chopped Coriander chopped
1 Tablespoon Lime juice
1 Tablespoon Fish sauce
Pak choy or mixed chinese greens
4 wedges lime to serve

Method:

1. Place coconut cream, sweet chilli sauce, chopped coriander, lime juice and fish sauce in a saucepan and bring to the boil then simmer for 5 minutes

2. While this is cooking, pan fry or grill the salmon to your liking

3. Serve the salmon on a plate and pour over the coconut sauce garnishing with the lime wedges and some coriander

4. Serve with noodles and steamed pak choy or mixed chinese greens
