The healthy breakfast

Morning has broken, time to get out of bed; wash the sleep out of our eyes, stretch and turn your face red as a beet thank you very much. You go into the kitchen and you open the refrigerator, (admit it, we all do this every morning.) you stare into the abyss behind the loaf of bread, the fish from the night before. You move the contents around as you if you were moving the brush and weeds hunting the illusive screwy “wabbit.”
Soda cans, stand between you and something to nosh. Then suddenly you remember the potatoes the creamy whipped, buttery delights sitting in a bowl, covered with plastic wrap; just waiting to be used again in some soup or re-warmed in a microwave.
“Fish!” you exclaim as you take out the plate of the cod, lightly seasoned with garlic, salt, and pepper. Sliced onions and lemons adorn the top with sprinkled parsley.
The ideas churn in your brain, “how can I make a decent breakfast out of this?”
Pan seared cod in olive oil, with potato pancakes
WHAT I NEED…
1 thawed cod fillet about 4-6 oz (per person) perfect!
¼ cup mashed potatoes (a person)
1 egg whole
1 cup bread crumbs
½ cup shredded parmesan cheese
1 tsp extra virgin olive oil (compared to butter and margarine, and yes I did say I am not your doctor, but olive oil is lower in sat fat, and cholesterol.)
WHAT DO I DO?
1. In a bowl, put potatoes, bread crumbs, and egg. Mix well together to medium firm consistency, not smooth and not too tight. Like meatloaf.
2. In a pan/ skillet. heat olive oil to medium high, make balls the size of golf balls of the potatoes. Flatten out into a patty, and place into the pan. Sear for 5 minutes each side till golden brown. Remove and place on paper towel.
3. In the same pan, adding a bit more oil, place fish down, cook for 6-8 minutes per side.
4. Serve ………….
This is a great breakfast for a nice Sunday brunch, or just times when you have time for a decent meal.
