Polenta1 cup yellow cornmeal
3/4 water
3 1/4 cups boiling water
1 1/2 tsp salt
1. Mix cornmeal and 3/4 cup water in 2-quart saucepan. Stir in 3 1/4 cups boiling water and the salt. Cook, strirring constantly, until mixture thickens and boils; reduce heat.
2. Cover and simmer about 10 mintues, stirring occasionally, until very thick; remove from heat. Stir until smooth.
