Skinny Chicken Parmesan
Ingredients: 4 (8oz) chicken breast halves, sliced in half; 3/4 c. seasoned breadcrumbs; 1/4 t. garlic powder; 1t. Italian seasonings; 1/4 c. grated Parmesan cheese; 2T. butter, melted; 3/4 c. reduced fat mozzarella cheese; 1c. marinara sauce; cooking spray
Directions: Preheat oven to 400 degrees. Line a large baking sheet with foil and spray lightly with cooking spray. Combine breadcrumbs, Parmesan cheese, garlic powder, and Italian seasonings in a shallow bowl. Melt butter in a separate bowl. Lightly brush butter onto the chicken, then dip into breadcrumb mixture. Place on baking sheet and repeat with remaining chicken. Lightly spray chicken with a little cooking spray to make it crispy. Bake in the oven for 20 mins. Remove from oven, spoon sauce over chicken and top with shredded cheese. Bake 5 more minutes, or until cheese is melted and chicken is done. I served mine over whole wheat spaghetti.
