Chewy Oatmeal Raisin Cookies 01-22-12

I always feel like when I'm cooking a nice meal a dessert should go with it. So, when I decided to cook for the family on Sunday I decided to make these Oatmeal cookies. Norby had mentioned before that they were his favorite, but I don't recall anyone ever making them for him and he was debating on whether or not he would stay for dinner or go home since he had a lot to work on. I asked him, "Do you want me to make you oatmeal cookies?" and he said, "Well don't go out of your way, but if you want to sure." So it was a done deal. When I started making my list he came in the kitchen and said "Are you really going to make me oatmeal cookies?" and I said "yeah I'll make them." And he replied "Ok...I think I'll stay, those are my favorite!" He wanted to make sure they weren't out of a box though--haha.

Ingredients: 2c. all-purpose flour; 1/2 t. baking soda; 1/2 t. salt; 3/4 c. melted butter (1 1/2 sticks); 1 c. packed brown sugar; 1/2 c. white sugar; 1 t. cinnamon; 1 T pure vanilla extract; 1 egg; 1 egg yolk; 1 1/2 c. old-fashioned oats; 1 heaping cup raisins; 1/2 c. chopped walnuts or pecans (these are optional and I omitted them); I also added in a tablespoon of brandy

Directions: Pre-heat oven to 325 degrees. Line cookie sheets with parchment paper (it really does make them turn out better!) Melt butter and let it cool slightly. Mix flour, baking soda, and salt; set aside. In a medium bowl, cream together the melted butter, brown sugar, and white sugar until well-blended (I added in the brandy here). Beat in the cinnamon, vanilla, egg, and egg yolk for 2-3 mins. until light and creamy. Mix in the flour mixture until just blended. Add the oats, nuts, and raisins. Mix until just blended. Place 1/4 c. balls of dough onto parchment lined cookie sheet and bake for 14-16 mins. Be careful not to over-bake! The edges should look brown & the centers still slightly soft.
