Easy Orzo Soup

Saute the Holy Trinity--that is some chopped onions, carrots & celery . Add some chopped garlic ( 1 or 2 cloves ) when the H.T. veggies are translucent so garlic doesn't burn. Notice no exact amounts here --use your own taste & common sense.. Then add a quart of chicken broth & 1/2 cup of orzo . Cook til orzo is tender & add a 10 oz. pack of frozen spinach. ( I zap it in microwave on defrost & then squeeze the living daylights out of it right over sink in packet. )Add lots of pepper to spinach & then grate lemon zest over all to heat up. Also squeeze some fresh lemon juice in soup. It's easy & delicious for a light lunch pr as a starter for dinner. Some good Italian bread goes well. Enjoy ! Serves 2 , but double i triple if you like....
