Bottom Layer

Ingredients :

  • 1 cup glutinous rice
  • 1 cup coconut milk - Use 1 tin of coconut milk, add water to make 2 cups
  • ½ tspn salt
  1. Soak glutinous rice for 5 mins, drain water & add 1 cup of coconut milk
  2. Microwave a) 5 mins on High b) Check whether there is enough water. If not, add more water c) 5 mins on High d) When cooked, press rice

Top Layer

Ingredients :

  • 3 tbsp of cornflour
  • 3 tbsp of plain flour
  • 1 egg
  • 1/2 cup of sugar
  • 1 cup coconut milk
  • 1 tsp of pandan/green flavouring
  1. Mix ingredients together & stir until sugar dissolves
  2. Strain the mixture onto the top of the cooked rice
  3. Put into microwave a) 2 mins High b) 25 mins Med Low
  4. Ready to serve or serve when slightly cooled.

Just microwaved/cooked this today. ;-)
turned out well but the green layer ingredients could be doubled for fun.

Loved it and will definately do this again.
Quick and easy, delicious recipe.
Pretty 'low fat' too
