Bottom Layer
Ingredients :
- 1 cup glutinous rice
- 1 cup coconut milk - Use 1 tin of coconut milk, add water to make 2 cups
- ½ tspn salt
- Soak glutinous rice for 5 mins, drain water & add 1 cup of coconut milk
- Microwave a) 5 mins on High b) Check whether there is enough water. If not, add more water c) 5 mins on High d) When cooked, press rice
Top Layer
Ingredients :
- 3 tbsp of cornflour
- 3 tbsp of plain flour
- 1 egg
- 1/2 cup of sugar
- 1 cup coconut milk
- 1 tsp of pandan/green flavouring
- Mix ingredients together & stir until sugar dissolves
- Strain the mixture onto the top of the cooked rice
- Put into microwave a) 2 mins High b) 25 mins Med Low
- Ready to serve or serve when slightly cooled.

turned out well but the green layer ingredients could be doubled for fun.
Loved it and will definately do this again.

Pretty 'low fat' too
