Early this
afternoon (October 5, 2007), my girlfriend and I tried the Boston Market Sweet
Potato recipe. Actually, I did most of the work and my girlfriend peeled the
large sweet potato after it was boiled. We halved the recipe because we only
had one large sweet potato instead of three sweet potatoes. The kitchen really
got humid while the large sweet potato was boiling and finally, when it got
done, I had my girlfriend peel it for me. Then I put the sweet potato in a
medium sized bowl and used an old fashioned mixer to mix up the sweet potato. I
wasn't used to using the mixer and some of the sweet potato went all over the
place. I had to clean up the mess with some paper towels. Then I mixed in a
half cup of sugar, 1 egg, one half stick of softened butter and around a half
teaspoon of vanilla extract. I used the mixer again and mixed up everything and
then, I found out that I had forgotten to preheat the oven. The oven was still
hot from using it to bake some tender pork loin chops so I just relit the oven
and put in the casserole. I set a timer for 23 minutes because I wanted to put
some miniature marshmallows on top of the casserole halfway through cooking. We
used miniature marshmallows instead of the Chrunch Topping. I got out my
digital camera and my tripod and took a photo of the casserole after putting the
marshmallows on the casserole and then, I put the casserole back in the oven for
around another 25 minutes. When the casserole was done, I took around three
more photos of it on the top of the stove. Unfortunately, the size of the
digital photos was too large for this site so the upload didn't work. My
girlfriend and I dished up the tender pork loin chopes and the sweet potato
casserole and sat down to eat and the whole thing was super delicious!
Especially the sweet potato casserole. I thought I might have added too much
sugar but it was good, anyway. I would definitely recommend this recipe to
