4 bone in pork chops
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon vegetable oil
2 cups water
3/4 cup milk
2 tablespoons butter
1 box scalloped potatoes with sauce mix
1 cup baby carrots
2 teaspoon fresh chopped parsley (if using dried flakes reduce to 1 teaspoon)
sprinkle pork chops with salt and pepper. heat il in 12 inch skillet over medium high heat. Cook pork chops until browned well on both sides, turning once. combine potatoes and sauce mix in a 1 1/2 quart un greased baking dish. Stir in the 2 cups boiling water, milk and butter. Mix in baby carrots and cooked pork chops. Bake at 400 F degrees for 30-35 minutes or until pork chops and potatoes are tender. Let stand a few minutes and garnish with parsley if desired and serve.
