you're gonna need/necesitas:
1 can black beans
1 teaspoon olive oil x 2
1 teaspoon cumin
1/2 teaspoon chili powder
1 clove garlic diced
1 tablespoon diced fresh cilantro
1/2 teaspoon chicken bullion (magi)
1 ear roasted corn
juice of 1 lime
salt and pepper to taste
1/2 a tomato, diced
1/4 cup shredded cheese
2 spoon fulls sour cream
1/2 avocado, sliced
ok, easy enough with one exception- the corn. Take an piece of aluminum foil and place the corn in it. Mr Corn sometimes gets lonely when he's in the oven, so you should take half the lemon juice, some salt and pepper and the olive oil and put them all in the aluminum foil too. Now wrap that all up together and either roast it over a fire or in the broiler. Turn it every 2-3 minutes until you've hot all the sides. If your broiler doesn't have a super high space shuttle launch setting, make that more like 3-5 minutes. You want to get some of the corn just barley blackening.
Now take that corn and slice it right the hell off the cob. It helps if you cut it onto a clean towel so that it doesn't bounce away.
In a pan take some more olive oil and heat it up. Add the beans and spices, then saute for a bit to get the can taste out of there. Add the corn and if you want, a little dash of hot sauce.
Now just plate the beans and arrange the tomatoes, sour cream and avocado like in the picture and then a little cheese around the edges. Pour a little lime juice on the avocado and tomato to keep it from browning.
Slice up the green onion and place it on the sour cream- this represents the eagle on the rock eating the snake that's in the middle of the real Mexican flag.
and.... BUENO! There you have it, the Mexican flag! Ole!
