The start of a cooking adventure

I have been a big fan of Cooking shows for over twenty years, since Julia Child and the Galloping Gourmet. I love to watch The Foodnetwork as well as collecting cookbooks and cooking magazines. I can read a cookbook like it's a novel and read it over and over. As much as I read I should be an amazing chef, but I'm just an everyday mom who has been cooking the same old safe things I know my family will eat. Well, with my pickiest eater off to college I have challenged myself to see how many different dinners I can cook, without repeats. There are so many incredible recipes out there that I am dying to try, so here we go. I know some nights will be very simple, but the goal here is different. I actually started this last week with:

Cedar Planked Salmon. (from all recipes.com)
Ingredients:
3 (12";) untreated cedar planks
1/3 c vegetable oil
1 1/2 T rice vinegar
1t sesame oil
1/3c soy sauce
1/4 c chopped green onions
1T grated fresh Ginger
1t minced garlic
2 (2 lb) salmon filets, skin removed

Directions:
1. Soak the cedar planks for at least 1hour in warm water or longer if you have time.
2.in a shallow dish, stir together the vegetable oil, rice vinegar, sesame oil, soy sauce, green onions, Ginger and garlic. Place the salmon filets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, or up to one hour.
3. Preheat an outdoor grill for medium heat. Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
4. Place the salmon filets onto the planks and discard the marinade. Cover and cook for about 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.

My husband said this was not only the best salmon he has ever had but maybe his favorite meal ever!

Another recipe I tried was a rub for Beer can chicken, but I think it would be good on any cut of chicken

Beer Can Chicken Rub

2 T smoked Paprika
2 T salt
2 T onion powder
1 T cayenne
1 T ground Cumin
2 t dried Thyme
2 t dried oregano
2 t black pepper
2 t garlic powder

It's great to read seotmihng that's both enjoyable and provides pragmatisdc solutions.
