Plains Strawberry and Cheese Ring

1 pound Sharp Cheddar Cheese, grated, then allowed to soften and come to room temperature.
1 C Chopped Pecans, ( I like to lightly toast these to bring out all the flavors)
1 C mayonnaise (regular or light, and I prefer Hellman's)
1 small Vidalia onion, grated
Dash of Cayenne pepper (I use about 1/8 to 1/4 tsp...depending on how many elderly or children will be at the event)

A food processor works very well to combine the ingredients. However, be sure to grate the onion before putting it all into the food processor so as to avoid onion "chunks".

Process all except the preserves.

Lightly grease a ring mold with additional mayonnaise, or use cooking spray. I way prefer to use the mayo since it can't change any flavors. I have also used plastic wrap to line the ring mold before packing it with the cheese......this is the NO FAIL method.

Pack cheese mixture into the mold. Chill overnight.

About 1 hour before serving, unmold on pretty platter. Fill center of ring with the strawberry preserves.

This is very tasty with many kinds of crackers--the rich buttery type is my family's favorite.
