!/2 C chopped pecans, toasted in non stick pan with butter flavor spray until
lightly browned
1/3 C Parmesan Cheese, grated
1/4 C fresh parsley, chopped
3 Tbsp fresh lemon juice, divided
1 Tbsp Olive Oil
4 Tilapia fillets (about 1 pound)
1 C instant brown rice, uncooked
14 oz fat-free reduced sodium chicken broth
1 C small broccoli florets, fresh, or frozen, thawed & well drained
Preheat oven to 375 degrees. Combine pecans, cheese, parsley, 2 Tbsp of the lemon juice and the oil. Place fish in single layer in shallow baking dish; spread w/pecan mixture. Drizzle with remaining 1 Tbsp lemon juice.
Bake 10-12 minutes or until fish flakes easily with fork. Meanwhile, cook rice as directed on package, substituting broth for the water and adding broccoli to the boiling broth along with the rice.
Serve fish along with rice mixture.
